I Give Diabetes Fit Food An A Plus
I have reviewed a diabetic cookbook by Ellen Haas called Diabetes Fit Food. Inside the pretty lil’ cover there are 200 recipes from the World’s greatest chefs. I have come across many yummy recipes over the last few months while reading through this cookbook.
I really like this one! The set up is easy-peasy and the nutritional facts are layed out nicely and the exchanges are right there in your face. You couldn’t miss them if you wanted to! No guess work needed, just the facts. The recipes are great as well. They are family friendly which is always important to a diabetic mommy. What good is a diabetic recipe if your kids won’t eat it? None!

Ingredients: 1 can crushed pineapples, 1/2 cup diced red bell pepper, 1/2 tsp minced jalapeno pepper, or to taste, 1 lb pork tenderloin, 1 tbsp olive oil, 2 cloves minced garlic, 1 tsp dried aregano, 8 flour tortillas, 1/4 cup salsa
Instructions: Combine pineapple, and red peppers, as well as jalapenos and set aside. Rub the pork with oregano, garlic and olive oil. Grill pork till it is just cooked through. Warm the tortillas. Slice the meat, fill the tortillas with fruit mixture and salsa and enjoy!
Nutrition: Exchanges- starch 2, fruit 1/2, lean meat 3, fat 1/2.

The carb count on that “diabetic” recipe looks like it would keep you diabetic for sure.
The exchange system was outdated decades ago. You really need to count the carbs in the recipe and figure out how far 5 grams of carbs will raise your blood sugar.
Low fat diets do nothing but raise blood sugar. They do not prevent heart disease, in fact, by raising triglycerides, they make it MORE likely to occur.
This cookbook looks like BAD news for people with diabetes!

Hey Jenny, the carb count per serving is 38 grams of carbs. And it is not only low fat then, but low carbohydrate. For a meal pair it with a small side salad. Most of the recipes are both and offer carb choices below 40 grams, which is standard for diabetic nutrition. And you have to eat some carbs, you do need energy and can’t starve your cells! Sensible is best! Have a great day!

Sorry Kendra, but “low carb” is rarely more than 15 grams per meal! 40 grams is far more than many of us can handle without insulin. And for me, that’s the TOP carb input I can eat WITH insulin and still get normal numbers and avoid lows. But most Type 2s aren’t on insulin and therefore, that 40 grams might push them up 100-200 mg/dl which is much too high for the oral drugs they take to lower to anywhere near a normal number.
We only “need” as many carbs as we can eat without having our blood sugar go to a dangerously high level. It’s not turning into “energy” when our blood sugar is high. It is turning into glycosylated proteins and promoting complications.
