Whole Wheat Pasta Is A Nice Option For Diabetics

pasta.jpgI ate pasta last night for dinner, and it was soooo good! I usually don’t eat the noodles, I will just have the salad and 2 meatballs while the kids and my hubby eat the full out meal. I am always scared at what the noodles and carbohydrates will do to my sugars. But, last night I made whole wheat pasta.

I had all 3 of my kids and my 2 nephews eating it with a smile on their faces. They really had no clue it was any different. Yee-ha, because you know what whole wheat pasta means? That I ate it! And it was yummy indeed.

Being 100% whole wheat, it had 36 carbs for a half of cup serving, and 180 calories and 1 gram of fat and only a few sugars. Good stuff. The kids ate the pasta with meatballs and sauce. For my sister and I, here is what I came up with and it was delicious…

Saute minced garlic, in about 1 tbsp olive oil

Add to it, 1 chopped fresh red pepper, cook a bit

Mix 1 tsp of butter and 1tsp dried chopped basil in with goodies in pan

Pour over whole wheat pasta and toss away, add in 1 cup of grated parmesan cheese and 1 tbsp dry crushed red pepper (I like spice). Keep on tossing till it is mixed up nicely and serve it up!

It was really good and oh so simple, you could probably add sauteed chicken if you wanted to. And by the way, my blood sugar was 112 this morning, so I would call it success.

    Did you know that if you slightly undercook the past, the glycemic index goes down. Then your blood sugars won’t go up as quickly after pasta. I know this is true for normal pasta. I assume it’s also the case for whole wheat past.

    Kendra, you should try fibergourmet.com. About half the calories, and the carbs are mostly fiber. A serving is only 20 carbs, and has 18g of fiber! The cool thing is it literally tastes just like regular pasta. I am pretty sure it is whole grain.

    Kendra: I see in the “Doctor’s Pocket Calorie, Fat and Carbohydrate Counter” book, 2001, that a ONE cup serving (5 oz) of whole-wheat pasta has 37 grams of Carb. That’s more in line with my experience versus your 0.5 cup size for 36 grams of Carb. What’s your source for Carb counts. Thanks. (I eat a lot of pasta!)

    Hi David

    I used the back of the box, Whole Harvest brand. I just quoted what the nutrition labeling said. That would be great though if you could give the brand of what you use. I like your numbers way better!! :)

    I believe the difference is between cooked and uncooked. I checked a package of Eden, 60% whole grain pasta and it listed 41 grams of C per 0.5 cups (55 gm), including 5 grams fiber. The package contains 6 55gm servings for a total weight of 330 gm. No doubt, the 55gm, 0.5 cup serving is dry weight. My reference, the “Doctor’s Pocket Calorie, Fat and Carb Counter” book lists cooked weights.
